Warm Wedding Wishes…

For The Future Garcias! Lainey, the bride-to-be had seen wedding invitations I’ve designed previously and asked if I’d be interested in working on her save the dates and wedding invites. Of course, I said yes! Invites are one of my favorite pieces to design. Here are a couple of the designs I presented to the happy couple (information has been change to ensure privacy).

Setting my workspace ABLOOM!

Adding color to a beige workspace (better word for cubicle) was my mission for the past few weeks. So far, I’ve added family pics and Paco pics (my pup), but I wanted to really make it pop. Thankfully, T.J Maxx had a couple of awesome pieces of glassware for $4.99 each. Also, Garden Ridge is sadly going out of business, but they had everything in the store on sale for 25% off. I’ve always loved their artificial flower plethora. Fake flowers that are badly made are no good, too cheesy looking. I also ran across a sweetly fantastic book with not only great illustrations, but also great typography, Live Now, artful messages of hope, happiness & healing. So here’s the line up…to a cozy cubicle 🙂

Special gift for my Dadda

Yes, that’s what I can my Dad. My Dadda is known for telling my family he doesn’t want anything for his birthday or holidays. I’ve always felt these special days call for a special gift. I just can’t let the day pass without doing something nice for him. Since I knew he’d appreciate my frugalness, I went with a picture frame I had around the house and designed a quote for the picture area. I thought this appropriately showed my gratitude for all he does for our family. What quote would you have used for your Dad?

Let us be grateful to people who make us happy. They are the charming gardeners who make our souls blossom.

A kick-butt video genius, friend of mine, Eric Peck and his partner in video, Kevin Labrecque asked for some logo design assistance for their new business venture, The Station. I love the concept, which is an old school gas station, early auto feel. After receiving a few mood photos, I sent my first concepts Kevin and Eric’s way.

Shrimp & Wild Rice Casserole is simply Ahhh-mazing! So tasty and easy, makes this a perfect dish to throw together after a busy evening. I even had a friend comment its the best thing I’ve made for him…a great compliment coming for someone who makes the best Turkey Tetrazzini I’ve ever had.

Ingredients:
1 (8oz.) pack of Wild Rice (We used the 90 sec, store brand)
1 lb shrimp
2 Tbsp butter
1/2 green bell pepper, chopped
1/2 onion, chopped
1 (10 3/4oz.) cream of mushroom soup
2 c. sharp Cheddar, shredded
salt & pepper

Directions:
1. Cook rice according to package minus 1/4 c. of water. Drain and cool. (The brand we used didn’t require adding water, simply microwaving for 90 seconds.)

2. Bring 2 c. of water and 1/2 Tbsp of salt to boil in a medium sauce pan and cook shrimp for 1 minute. Drain immediately and set aside.

3. Heat butter in pan and saute pepper and onion until soft, about 5 minutes. Heat oven to 325°.

4. In a large bowl, combine rice, soup, 1 1/2 c. of cheese, shrimp and veggies. Salt and pepper to taste. Mix well.

5. Spray 9″ square pan, add mixture and top with remaining cheese. Bake for 30 minutes or until bubbly.

Kitschy Quiche: Oh so yummy & simple!

Recipe variety makes my week! I’ve been meaning to blog a little about the great ones my boyfriend, Nick and I have come across, but .. time kind of flew by. We both really enjoy cooking and take turns being the head chef for the night. Simple and yummy are pretty much our favorite requirements for recipe selection. Let me know if you try this one!

Zucchini Quiche

Ingredients:
4 c. zucchini, sliced, (Variation: mix of squash & zucchini)
1 c. onions, chopped
1/2 c. butter
2 eggs, well beaten
8 oz. Mozzarella cheese, shredded
1 tsp. lemon-pepper seasoning
1 tsp. Italian seasoning
8 oz. can of crescent rolls
2 tsp. Dijon mustard
(We added some minced garlic to the veggie mix while in the skillet.)

Directions:
1. Heat oven to 375°. Cook zucchini and onion in butter til tender in skillet. Stir in spices.

2. Meanwhile, in large bowl, blend eggs and cheese. Add veggie mixture when tender.

3. Place crescent rolls in ungreased pie dish, pinching seams together. Spread mustard over crescent rolls. Pour mixture evenly. Bake for 20 mins, let stand for 10 mins.
